Potato Roesti

Quick, easy, delicious Potato Cake

2 1/2 lbs Yukon Gold potatoes

3/4 tsp salt

1 1/2 tsp corn starch

4 tbsp unsalted butter

Shred, rinse, strain, squeeze dry, toss w/ salt n corn starch,

melt half butter medium heat

cover n cook 6 min

uncover, pat down w/ spatula, n cook 9 min

plate, melt rest of butter, flip, cook 8 min & check


Serve w/ carmalized onions, shredded cheeses, balsamic reduction, ...?
